【School of Bekka, Intensive Japanese Language Program】2020 Fall Semester Activity Report 2: Japanese Green Tea Seminar (A collaborative class with ITO EN, LTD.)

12月3日 日本事情の授業の一環で「伊藤園 日本茶セミナー」が開催されました。昨年度は、伊藤園の会社の方が、別科を訪れ、熱いお茶と冷茶の飲み比べを学生たちと行いましたが、今年度は、コロナ禍ということでオンライン開催となりました。このセミナーでは、学生がパソコンで説明を聞きながら、準備した熱湯でお茶を入れるので、安全上の配慮から、日本語最上級のGクラスのみの開催となりました。

当日は、まず伊藤園の方が日本茶の歴史や種類についてオンライン講義をし、次にお茶の入れ方を実演しました。その後で、あらかじめ学生に配布しておいた3種類のティーバック(緑茶・ほうじ茶・玄米茶)を使用し、学生は実際にお湯の温度や蒸らし方を変えてお茶をいれ、その違いを味わいました。ペットボトルの緑茶しか飲んだことがない学生が多い中、参加した学生からは、日本茶にも様々な種類や入れ方があるということを知り、日本茶に興味を持ったという声が多数聞かれました。以下は、学生からの感想です。

On December 3, 2020, the "Japanese Tea Seminar by ITO EN, LTD." was held as part of the Japanese Studies class. Last year, ITO EN's staff visited the Bekka to compare hot and cold teas with the students, but this year, the seminar was held online due to the COVID-19 pandemic*. For safety reasons, the seminar was held only for students in the G class, the highest level of Japanese, because the students had to listen to the explanation online, while making tea with the prepared boiling water by themselves.

In the event, a person from ITO EN gave an online lecture on the history and types of Japanese tea, followed by a demonstration on how to make tea. Then, using the three types of tea bags distributed to the students in advance (Sencha, Hojicha, and Genmaicha), the students actually brewed the tea by changing the temperature of the water and the method of steeping, and tasted the differences finally. Although most of the students had only ever drunk green tea in plastic bottles, many of them said that they became interested in Japanese tea as they learnt that there are various types and ways to prepare Japanese green tea. 今日は日本のお茶の歴史と日本のお茶の種類について簡単に紹介していただきました。日本の緑茶文化は中国から学んだが、日本の茶商は新しい製茶方法も発明しました。中国の製茶方法は、熱によって生葉を「脱水」のように対処することです。 それに対して、日本の製茶方法は、生葉を蒸してから乾燥することです。このように、高い温度の環境で、「干し」と「潤い」の差はお茶に大きな違いを引き起こすかもしれません。中国の緑茶と比べると、日本の緑茶は香や味が違うし、お茶の中の成分も全て同じわけではありません。ここで、面白いことに気付きました。 料理界では、「中国の料理は火、日本の料理は水」という話があります。これはお茶の作り方にも合っていると思います。 料理は「火」と「水」、お茶は「干し」と「潤い」に似ています。製茶方法から、日本と中国の食べ物と飲み物に対する考え方も見えました。そして、お茶の味と匂いを最大限にするため、ティーバッグの種類によって,お湯の温度などが異なることも分かりました。今日の授業を通して、私はお茶について趣味を持ち始めました。日本の茶道と中国の茶道の違いなどについてもっと勉強したいです。ゆっくりお茶を味わいながら、勉強するのがとても嬉しかったです。

Today we learnt about the history of Japanese tea and the types of tea. Although the Japanese green tea culture originated in China, the Japanese tea merchants invented a new method of tea making. The Chinese method of tea making is to dehydrate the fresh tea leaves directly by heating, while the Japanese is to steam and then dry them. At the same high temperature, the difference between drying and moistening should have a different effect on the tea leaves in aroma and flavor as well as the ingredients in the tea should be different. Here I notice an interesting thing. Culinary people say that "Chinese cooking is about fire, while Japanese cooking is about water", and this coincides with the way tea is made in both countries. From a culinary point of view, it is "fire" and "water", while from a tea point of view, it is "dry" and "wet". Therefore, the difference between the Japanese and Chinese views on food can be seen in the way tea is made. I also learnt that the temperature of the water used to make tea varies depending on the type of tea, so that the flavor and aroma of the tea is brought out as much as possible. Through this seminar, I have become interested in tea and hope to learn more about the differences between Chinese and Japanese tea ceremony culture. A class like this where I learn about tea and Japan through tea tasting is really relaxing and enjoyable.

今天我们学习了日本茶的历史以及种类。虽然日本的绿茶文化是从中国学习的,但是日本的茶商在原来的基础上又发明了新的制茶方法。中国的制茶方法是直接通过加热将新鲜的茶叶脱水,而日本的制茶方法是将茶叶蒸过之后再作干燥处理。在相同的高温下,干燥与湿润的不同应该会对茶叶产生不同的影响。日本的绿茶与中国的绿茶的香味与味道不同,茶中的成分也理应不尽相同。在这里我们注意到了一个有趣的事。在料理界有着"中国的料理在于用火,日本的料理在于用水"这样的说法,而这也和两国的制茶方法不谋而合。从料理来看是"火"与"水",而从茶来看则是"干"与"湿"。因此,从制茶的方法中可以看出日本和中国对于饮食的看法的不同。此外我们也学习到,根据茶的不同种类,为了使茶的味道和香味尽可能地体现出来,沏茶的水温也不同。通过今天的学习,我开始对茶产生了兴趣,并希望能更多了解到中日茶道文化的区别。像这样通过品茶而学到有关茶与日本的知识的课堂真的是轻松愉快的。
